Pumpkin Tacos

Cooking from scratch with organic, whole foods is truly rewarding and it brings me so much joy knowing that the food going into my belly is nourishing and made with love. One of my fav vegan chefs, Gaz Oakley, shares some amazing reasons why you’re missing out if you don’t cook for yourself from scratch in this video that I just watched. Do yourself a favour and check it out or just any of his videos in general. He’s not only hilarious to watch but super informative and makes you feel all kinds of warm and fuzzy. Anyways, here’s my new fav taco recipe that I made for the first time tonight simply because I was craving tacos. It was so f’ing good. Pls give it a try or use it as inspiration to make your own fun veggie tacos!

RECIPE

Serves 2

Roasted Veggie Ingredients:

  • Half a pumpkin

  • Half a carrot

  • Half a white sweet potato (or use whatever root veggies you like)

  • 2 tbsp ghee or oil of choice

  • Couple pinches of sea salt

  • Couple sprinkles of pepper

  • Freshly grated ginger

    Other Ingredients:

  • Tortillas

  • Lime

  • Fresh avo

  • Cashew cheese (make your own if you can - it’s so easy)

  • Spinach

  • Any other toppings you like

Method:

  • Preheat the oven to 175ºC (350ºF).

  • Chop the pumpkin and root veggies into cubes (or maybe into some fun shapes?) put into an oven dish, drizzle some oil, and add a sprinkle of salt and pepper and grated ginger.

  • Cook pumpkin in oven for 20-30 mins and put on some funky beats.

  • Once the roasted veggies are done, take em out of oven then heat up your tortillas.

  • Assemble everything together and have fun with it!

  • Say a lil mantra before eating, take your time and chew your food :)
