Kitchari: The Ultimate Nourishment for Body and Soul
My favourite hug in a bowl – Kitchari! It should be a staple in every kitchen.
Rooted in Ayurvedic tradition, kitchari (which means "mixture") is a nourishing and easily digestible meal that is as comforting as it is healing. Traditionally, it is the go-to remedy in Indian culture when you're feeling unwell, but its benefits extend far beyond that.

RECIPE
Serves 4-6
Ingredients:
* ½ cup basmati rice
* ½ cup split yellow moong dal or green mung beans
* 1 tbsp coconut oil or ghee
* Chopped vegetables of choice (zucchini, carrot, broccoli + broccoli stem, asparagus, sweet potato, pumpkin)
* 2-3 cups vegetable broth or water (may need more water if want soupy)
spices:
* ½ tsp fenugreek seeds
* ½ tsp black mustard seeds
* 1 ½ tsp ground cumin
* 1 tsp ground turmeric
* 1 tsp ginger (fresh if possible)
* Salt and pep
optional:
* Coconut milk or cream
* 1 small pinch of asafoetida “hing” powder
* 1 tsp garam masala
* 1 tsp curry powder
* 1 bay leaf
optional Garnish:
* Lemon or lime
* Fresh herbs like coriander
* Steamed spinach leaves
* Lightly grilled avocado
* Homemade chapati or dosa
Method:
Rinse then soak the green mung beans overnight
Rinse the beans again the next morning
Rinse the rice until water runs clear
Combine the 2 seed spices
Combine the spices (leave out turmeric)
Add coconut oil or ghee to pot
Add the seeds first and swivel them around until they pop!
Add hing powder
Add spices and mix
Add grated ginger until aroma builds
Add mung beans and rice and coat them with the spices
Add turmeric
Add tomatoes (if using)
Add small chopped veggies
Make sure everything is coated with all the spices
Add water and bring to boil (use enough water so it’s above the other ingredients)
Reduce heat to simmer
Cover with lid for 15 mins
Check if water dissolved add more if need be or add the coconut milk/cream
Add salt and pepper
Cook 5 mins longer if need be
Add broccoli last 4 mins
Take off heat before all the water evaporates to avoid burning
Serve with garnish of choice
